Yankee Pot Roast In The Slow Cooker

I am the first to say with all the demands on my time, I find it difficult to get a healthy meal on the table.

Crock pot cooking really is the easiest way to get dinner done and get on with life. I know that if I get our family meal prepared first thing in the morning, I get to enjoy more time with the family that night. And it get’s better, the crock pot cooking method is a great way to save money.

I spend a lot of my time converting recipes to fit my family budget and time. But there are a few family favorites I would change and this Yankee Pot Roast Recipe is one of them. This is a tried and true recipe handed down in my family for decades.

It’s a simple recipe, the ingredients are basic and of course with crock pot cooking you can add and omit as to your preference but my recommendation would be to leave it alone, its that good.

Recipe For Yankee Pot Roast Prep Time: 10 minutes – Cook Time: 8 1/2 to 9 hours on low – Serves 10-12

Ingredients: 1 beef roast ( 2 1/2 lbs.) 3 unpeeled potatoes,cut into quarters 2 large carrots, cut in 3/4 in. slices 2 stalks celery, cut in 3/4 in. slices 1 sliced medium onion 1 large parsnip, cut in 3/4 in. slices 2 bay leaves 1 tsp. dried rosemary 1/2 tsp dried thyme 1/2 cup beef broth

Directions: Remove excess fat from roast, cut into serving size pieces and sprinkle with salt and pepper. Combine potato, carrot, celery, onion, parsnip, bay leaves, rosemary and thyme in crock pot. Place roast on top of vegetables and pour broth over it. Cook on low 8 1/2 to 9 hours or until roast is fork tender.
