by Bob Johnson

UK hampers are gifts that are normally presented in a wicker basket. The act of giving a hamper has a long history in the Western world and, before, was done as a giving gesture, using the hamper to present food and other home essentials to the poor. The basket the gift was presented in was also purposefully chosen as it was a practical household item that could be used and reused.

In later times, hampers have come to be less presents of essentials and more presents of small luxuries, such as wine hampers for example. An emphasis is placed on the best items such as gourmet jams, expensive chocolates, exotic coffee beans, fine wines and other expensive items that can be enjoyed as a treat and will keep long enough for your special someone to take their time in using the hamper.

There has also been a rising tendency to produce specialized hampers – wine hampers that are filled with a diverse range and types of wine, chocolate hampers and bread and cheese hampers. What kind of popcorn pops the most?

by Viliam Kanis

Have you ever wondered how those corn kernels turn into popcorn? Like the name suggests, popcorn is simply corn kernels that have popped through heating and converted into popcorn.

When corn is cut off the cob, it is stored and preserved. Each kernel has a little water or moisture locked inside of them. So when you start to heat the popcorn the pressure builds up inside the corn to the point where it has no where to go. The moisture inside the kernel converts into steam and the pressure increases exponentially. The pressure builds up and the starch starts to expand to the point where the kernel explodes. This explosion gives birth to the tasty treat we call popcorn.

Large, tender and tasty popcorn is in demand. How do we guarantee our corn kernel produces these tasty treats? Unfortunately this is out of hands and the responsibility is squarely placed on the farmers.

When the conr is harvested its moisture content is 16-20%. After harvesting the corn it must be dried so that it only contains 12-15% of water.

Not every corn can produce popcorn. Different conr means different moisture content. Too little water results in no popcorn. It’s important to realize that popcorn is formed through the expansion of water into gas which results in a build up of pressure. The pressure needs to be released which subsequently gives birth to the tasty popcorn.

The anatomy of the corn kernel is quite simple. The corn kernel contains 3 main parts which play a significant role in the production of popcorn. The pericarp, which is the hull or simply the outer covering, the germ which is the part that sprouts and the endosperm which contains the starch that expands.

So how does the popcorn withstand the build up of pressure? Pericarp is strong and acts as a cover of the corn kernel. This strong, protective layer acts like a seal, just like a sealed plastic bag would inflate when micro waved. The steam within this cover builds up to the point where it expands and eventually explodes. If the pericarp of the corn was damaged or cut the corn will not pop.

The expansion or popping of the corn takes place in the tightly packed endosperm. The greater development of the endosperm results in bigger and tastier popcorn. The shell of the corn explodes after the inner pressure exceeds about 9 athmospheres. The gelatinized starch granules found in the endosperm do not explode, but expand into the cooler room temperature and solidify into the thin, fluffy like bubbles that we call popcorn.

Different varieties of corn have been genetically engineered for the purpose of producing popcorn. The white and yellow hull-less are the most common. Any corn kernels that can preserve and contain 10-15% moisture content are suitable for producing popcorn.

What Is Teriyaki Sauce?

by Ferdinand Emy

A traditional Japanese sauce, teriyaki sauce has gathered tremendous popularity in the western cultures. Utilized as either a marinade or a garnish for rice, meats and vegetables, teriyaki sauce is a sweet sauce. Having a flexibleness that makes it suitable as an add-on to many cuisines, it can as well be applied as a dipping sauce.

Ingredients:

Mirin Sake Cornstarch Brown sugar Garlic Soy sauce Ginger

Readying Time: 5 to 10 minutes

All ingredients should be rinsed, chopped or ground prior to mixture. Because they will be cooked with the vegetables or meat, some teriyaki sauces are not cooked. Different ingredients will be utilized based on if it is a modern or traditional teriyaki sauce.

Use:

Teriyaki sauce is traditionally applied as a marinade. Teriyaki is a type of cooking process in Japan, with the teriyaki sauce being the sweet marmalade that the meat or vegetables are coated in. More often than not, Teriyaki techniques are reserved for white meats such as fish and chicken. For fish, yellowtail, marlin, skipjack tuna, salmon, trout, and mackerel are most commonly applied.

Teriyaki sauce tends to be a reference to similar style of sauce applied in the teriyaki way of cooking in cultures of the west. As the cooking of the food is not typically done in the same method, these sauces do not tend to be original teriyaki. In this case, Teriyaki is typically utilized in stir fry and as an accompaniment, rather as a marinade.

It is recommended that your vegetables or meats be kept in the marinade for at least thirty minutes before cooking. Because it permits the meat to absorb the flavor of the teriyaki sauce, it is not common for recipes to call for a marrinade of twenty-four hours. Generally, the stronger the teriyaki flavor, the longer it will be permitted to marinade. In some cases, such as fish, you will desire to use a shorter marinade process so that the fish tastes as fresh as possible.

The grilling of the teriyaki can be carried out in many surface types, which include, coal and wood burning grills, gasp and electric.

History:

Teriyaki was first utilized in Japan in the seventh century, along with sukiyaki and yakitori. Improved alongside each other, these three cooking methods are closely interconnected. ‘Yaki’, the base word in all 3 types, plainly means grilled. Often, yaki dishes will include very similar ingredients with differences in how the meat or vegetables are grilled.
