A Coffee Bean Grinder Guarantees Freshness

When you grind coffee beans you want to get a large surface that can be exposed to the hot water. The greater the surface exposure, the more oils and flavor will be extracted. Blade grinders do not produce an even grind, especially the less expensive models. The result is that most coffee experts consider them inferior.

Burr grinders meanwhile are typically used in high quality coffee houses because they give a much better grind. The burrs, or metal discs, are spaced to precise specifications, giving you a grind that is more even. A more even grind means a better cup. And it doesn’t matter what type of coffee you like best because these grinders are adjustable. So if you like Turkish drip or automatic drip, you can set your burr grinder to give you the grind you like best.

One thing about coffee is that everybody likes theirs a little different. What I may like best is probably different than what you prefer. But we can all agree that when it is fresh ground, it will taste better. That’s why if you choose a burr or blade coffee bean grinder, you’ll still get a cup that is better than anything you buy from a can. I can only suggest you try it. You may never buy a can from the grocery store again.

A Wok - Not Only for Stir Frys

The first use you think of when you hear about woks is almost certainly stir-frying. Woks have been around for a very long time and, being the mainstay of Chinese and other Asian cooking are a multiple function utensil, serving the cook well in the preparation of many meals.

The original wok was designed with a round bottom and sloping sides which made the small amount of fuel available work to the cook’s advantage. The extreme, high heat that radiates up the sloping sides of the wok allows shorter cooking time. The heat must be controllable for the process to work.

However, with the increase use of electric and glass top stoves, the flat bottom wok was designed to accommodate those appliances. Rounded bottom woks are still the best for gas ranges, but if you have an electric or glass top, your option is the flat bottom wok.

Your choices for woks, whether they are made of cast iron or stainless steel, need to be your consideration. The materials used should all produce a good effect because the design remains the same.

Cast iron woks are timeless. They are still used by Chinese families and the cast iron wok will probably live on for generations. Even though they must be seasoned well, their ease of use makes it worth your time. Stainless steel woks are 5 ply. The inner 3 ply construction is made of aluminum which is known for its heat distribution. This 14″ wok may cost about ?65. Buy a 14″ cast iron wok for as little as ?10. Some woks will work on glass top ranges.

What is so special about wok cooking? The shorter cooking times seal in juices, save energy and create delicious flavours. The lean Asians are a testimony to the wok cooking with its low cholesterol cuisine. In wok cooking you can steam, stir fry, simmer and deep fry. Even in the deep frying you will be able to avoid the longer cooking times which lead to more oil absorption meaning higher calories. Various accessories can be purchased along with your wok to insure that your new cooking techniques are done properly. For instance, your steamer basket should be 12″ in diameter to fit a 14″ wok.

Wok cooking is a process of two separate events. The first is the preparation of the raw ingredients. You will be chopping and slicing ingredients for transferring into your prepared wok. The second part of the process is the actual cooking. Follow the directions in your new cook book to the letter in order to be successful with wok cooking techniques.

Three important factors in deciding to purchase a wok are all that you really need to consider. The healthier food, the delicious flavours, and faster meal preparation are the top reasons for getting a wok and throwing out some of those old pots and pans. I Love Crock Pot Recipes

Crock pot recipes are so easy to follow. The prep is easy, just cut up some vegetables, add water and add some meat. They were first introduced in the 1970s, and are made of heat-resistant materials like ceramics or porcelain and are usually round or oval in shape with a close-fitting lid. Whatever you do, never lift up the lid to see how things are going. This will ruin your meal.

There are many different types of crock pot recipes, but they all share some common elements. All of this type of recipe must involve some kind of liquid to prevent the main ingredient of the meal from drying out over the long cooking period. This liquid keeps the meat in a nice environment and helps tenderize the meat slowly. By the time the crock pot is done cooking, the meat is so tender. While water is the most common liquid used, wine or broths can also be used. I prefer just to use water. It’s simple enough and will flavor when the meat begins to cook.

The liquid evaporates during cooking, but the lid re-condenses it and returns it to the dish, helping the food to stay moist and tender throughout. Many slow cooker recipes involve cheaper cuts of meat, as the long, gentle heating process breaks down the toughness of the meat and allows the flavour to grow and develop. This is nice for the family on a budget.

How to Buy an Ice Cream Machine

Now that summer is here, it’s time for everyone’s favorite frosty treat, ice cream. Those looking to save money however might invest in an ice cream machine for making ice cream at home. Plus you’ll feel good knowing what goes into your ice cream. So how do ice cream makers work?

An ice cream maker also known as ice cream machines and ice cream freezers all pretty much work the same way–an ice cream mixture is brought to the freezing point and at the same time, the mixture is stirred to keep ice from forming.

While there are many styles of ice cream machines, choosing one can be a little difficult. Here are some of the basic types.

Not only simple but also the oldest, the first kind of ice cream machines are hand cranked. Usually, they have a wooden outer bucket and an inner chamber. The inner chamber gets filled with ice cream mix and the outer bucket gets filled with rock salt and ice. Add a little sweat equity via the hand crank and enjoy.

Although spending 20 or 30 minutes working up a sweat to enjoy ice cream may not seem ideal, people who really love ice cream swear by their hand powered machine. For those with tighter time constraints, electrical motors are available to handle the task. Started in the late 1800’s, the White Mountain Freezer Company is the longest producing maker of these kinds of ice cream makers.

The second type kind of ice cream machine is more modern and also takes a bit less work. And while quite similar in appearance to the electric models mentioned above they differ in the way they achieve their “chill.” Instead of using rock salt and ice, these ice cream makers use a a double walled container that has refrigerant between the two walls. Before use, the container must be placed in the freezer for about a day or overnight, to lower the temperature of the coolant to below freezing.

So while the mess of ice and rock salt is gone, you’ll also want to make sure your ingredients are also equally chilled otherwise you might end up with something more akin to soup than ice cream which is probably the most common quip about these machines. Popular brands include Cuisinart, Rival and Krups

Lastly there is the compressor ice cream freezer. And although it’s bigger and way more expensive that either of the first two types, if you make ice cream on a regular basis, it’s probably worth the cost. This unit has a refrigeration compressor, hence the name, built in. Therefore instead of ice or a freezable bowl it chills the ice cream mix just like the freezer unit in your fridge.

Some models come with a mixing bowl that can’t be removed which makes cleaning hard. So you might want to take that into consideration when buying.

Ice cream makers are not only fun and affordable but because you control the what goes into your ice cream, you won’t need a degree in chemistry to tell people what’s in it. Not only that but making ice cream at home can be a family event especially if your ice cream machine has a see-through lid. For a dinner, you might prepare Butternut squish Soup with Leeks, Asian Slaw with Peanut Dressing and a Go Green Smoothie. Butternut Squash Soup with Leeks

Ingredients:

2 garlic cloves 2 small or 1 medium leek, about 5 ounces, rinsed well and cut into 1-inch pieces 2 pounds butternut squash 1 teaspoon extra virgin olive oil 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground pepper 1/2 cup dry white wine 3 cups low sodium chicken broth 1/4teaspoon ground nutmeg 1/2 teaspoon fresh lemon juice 1/2 cup heavy cream (optional)

Instructions Insert the metal blade. With the machine running, drop the garlic thru the feed tube and process to carefully chop. Scrape the work bowl. Add the leeks and heartbeat to cut, about 10 beats.

Place 6-quart stockpot over medium heat and add the olive oil. When the olive oil is hot, stir in the sliced leeks and garlic. Sweat the vegetables over medium low heat so they become soft. Stir occasionally in order that they do not pick up any color.

While the leeks are cooking, replace the slicing blade with the cutting disc assembly. Peel and seed the crush ; cut to fit the feed tube. Slice the mash.

Add the cut squash into the stockpot with the leeks and garlic ; stir well. Add the pepper and salt. Cook for an extra five mins.

Add the wine to the pot. Bring to boiling point and let the wine reduce by half. Add the chicken broth and nutmeg. Bring soup to a low boil. Reduce heat and let broil till squish is very soft and is easily pierced with a knife, about 20 minutes.

Strain the solids from the cooking liquid, reserving the cooking liquid. Transfer half of the cooking liquid to a clean pot and reserve. Insert the metal blade. In 2 groups, add the solids to the Kenwood and process to pure, two to three minutes. Scrape the work bowl to insure the mixture is homogenous. Return the pured solids to the cooking liquid and stir to incorporate. Add the lemon juice. Mix in reserved cooking liquid to obtain desired consistency. Taste and adjust seasoning. If using the heavy cream, stir in last and bring to the boil.

Asian Slaw with Peanut Dressing

Dressing: 1/2 cup toasted unsalted peanuts 2 garlic cloves 6 slices of fresh ginger, peeled, each about the size of a quarter 4 tablespoons natural style peanut butter 1/3 cup plus 1 tablespoon rice vinegar 1 tablespoon granulated sugar 2 tablespoons + 1 teaspoon hoisin sauce 2 teaspoons sesame oil 2 teaspoons low-sodium tamari or soy sauce 2 tablespoons vegetable oil

Salad: 4 ounces carrots, peeled and trimmed to fit the feed tube horizontally 4 ounces red radishes, washed, ends cut flat 1 broccoli spear, washed, flowerets trimmed and reserved, stem peeled 3 green onions, trimmed, cut to 4-inch lengths, include tasty green tops 1 red bell pepper, stemmed, seeded and cut into 1 x 3-inch pieces 1 yellow bell pepper, stemmed, seeded and cut into 1 x 3-inch pieces 8 ounces Napa cabbage, washed and cut into 3-inch lengths 6 ounces bok choy, washed and cut into 3-inch lengths (include leaves if pretty & tender) 4 ounces snow peas, trimmed

Instructions Insert the metal blade. Pulse to chop the peanuts, about 10 times. Remove and reserve. With the machine running, drop the garlic and ginger down the feed tube to cut. Scrape the work bowl ; process five seconds longer. Add the peanut butter, sugar, rice vinegar, hoisin sauce, sesame oil, and tamari. Process till smooth, about 10 seconds. Scrape the work bowl. With the machine running, add the oil in a steady stream through the little feed tube. Process until emulsified, about 10 to fifteen seconds. Remove and reserve. The dressing may be made up to several days ahead. Cover well and cool. Allow to sit for 30 minutes at room temperature before using.

Clean the work bowl. Insert the shredding disc. Organize the radishes in the large feed tube, cut side down, and shred. Prepare the carrots horizontally in the enormous feed tube and shred. Insert the trimmed and broccoli stem in the little feed tube and shred. Transfer the shredded veg to a giant bowl.

What Safety Features You Should Demand In Your Next Pressure Cooker

* Weights - Older cookers used to jiggle when pressure built up. Nowadays, top weights are put on the lids of the device to reduce shaking of the top. Also, a manual dial feature or rising valve stem is also included to the pressure cooker. These parts eliminate the escape of water from the food. In case of too much pressure, the built up pressure is safely moved through a series of secondary stems and valves on the pot.

* Metals - A stainless steel type cooker is great for cooking various foods as it does not react with acid ingredients like tomatoes. Stainless steel cookers can be safely used on any stove top. They can also be used inside the grill or put right onto a flame when camping. Also, a metal spoon is good to use in a stainless steel pressure cooker as they do not scratch or discolor the cooker. Moreover, stainless steel pressure cookers can be used for years without rusting.

* Pop up pressure indicator - This important function shows when the chosen pressure setting has been reached. This feature eliminates guesswork and accurately shows the pressure in the cooker.
